Lemon Madeleines
Madeleines are traditionally baked in shell-shaped molds, resulting in their distinctive shape.

Preheat the oven to 350°F (175°C) and grease the madeleine molds.

In a medium bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, cream together the butter and granulated sugar until light and fluffy.

Beat in the eggs, one at a time, followed by the lemon zest and lemon juice.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Spoon the batter into the prepared molds, filling each about 3/4 full.

Bake for 10-12 minutes or until the edges are golden brown.

Remove from the oven and let the madeleines cool in the molds for a few minutes.

Transfer the madeleines to a wire rack to cool completely.
