  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
  3. In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract, lemon juice, and lemon zest.
  4. Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula.
  5. Bake for 55-60 minutes, or until the center is set and the top is lightly golden. Remove from the oven and let cool in the pan for 10 minutes, then remove the sides of the springform pan and let the cheesecake cool completely.
  6. Once the cheesecake has cooled, spread the lemon curd evenly over the top. Refrigerate for at least 2 hours, or until set.
  7. Before serving, garnish with whipped cream and additional lemon zest, if desired.
