Lemon Cranberry Florentines
Florentines are named after the Italian city of Florence, where they originated in the 17th century.

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

In a mixing bowl, combine almond flakes, dried cranberries, granulated sugar, all-purpose flour, unsalted butter, lemon zest, lemon juice, honey, and vanilla extract. Mix well.

Take small portions of the mixture and form into small discs on the prepared baking sheet.

Bake in the preheated oven for 12-15 minutes or until golden brown.

Remove from the oven and let cool for 5 minutes on the baking sheet.

Melt dark chocolate in a microwave or over a double boiler.

Dip the bottom of each florentine into the melted chocolate and place back on the parchment paper.

Allow the chocolate to set for about 30 minutes.
