  2. Crush the digestive biscuits and mix with melted butter.
  3. Press the mixture into the base of a springform cake tin.
  4. In a mixing bowl, beat together cream cheese, sugar, lemon juice, lemon zest, eggs, and vanilla extract until smooth.
  5. Pour the mixture over the biscuit base.
  6. Bake in the preheated oven for 50-60 minutes, or until set.
  7. Allow the cake to cool in the tin for 10 minutes, then remove and let it cool completely.
  8. Whip the cream until thick and spread it over the cooled cheesecake.
  9. Refrigerate for at least 2 hours before serving.
  10. Serve chilled and enjoy!
