  1. Preheat the oven to 350°F (175°C).
  2. Roll out the pie crust and cut it into small circles to fit into tartlet molds.
  3. Place the pie crust circles into the molds and press gently to shape them.
  4. In a bowl, mix together lemon zest, lemon juice, sugar, and cornstarch until well combined.
  5. Spoon the lemon mixture into the tartlet molds over the pie crust.
  6. Bake in the preheated oven for 15 minutes or until the crust is golden brown.
  7. Remove from the oven and let the tartlets cool for 30 minutes.
  8. Once cooled, remove the tartlets from the molds and top with mixed berries.
  9. Serve with a dollop of whipped cream and garnish with fresh mint leaves.
