  3. In a small saucepan, sprinkle gelatin over cold water and let it soften for 5 minutes. Heat the gelatin mixture over low heat until it dissolves completely. Stir the gelatin mixture into the cream cheese mixture.
  4. Pour the mixture over the crust in the springform pan. Refrigerate for at least 3 hours or until set.
  5. Before serving, remove the sides of the springform pan. Garnish with whipped cream and lemon slices if desired.
