  1. Trim the leeks, wash thoroughly, and slice them.
  2. In a large pot, melt the butter over medium heat.
  3. Add the leeks and sauté until softened, about 5 minutes.
  4. Sprinkle the flour over the leeks and stir well to coat.
  5. Gradually pour in the stock, stirring constantly.
  6. Bring the mixture to a simmer and cook for 15 minutes.
  7. Add the grated Gruyere cheese and stir until melted.
  8. Remove the pot from the heat and allow the soup to cool slightly.
  9. Using a blender or immersion blender, puree the soup until smooth.
  10. Return the soup to the pot and stir in the heavy cream.
  11. Season with salt and black pepper to taste.
  12. Simmer for an additional 5 minutes.
  13. Serve the soup hot, garnished with chopped chives.
