In a large pot, bring vegetable stock to a boil.

Meanwhile, in a bowl, mix together chopped leek, grated ginger, matzo meal, egg, salt, and pepper.

Form the mixture into small balls and drop them into the boiling stock.

Reduce heat to a simmer and cook for 20 minutes.

In a separate pot, bring water to a boil and add lemongrass stalk. Simmer for 10 minutes to infuse the lemongrass flavor.

Strain the lemongrass consomme and discard the stalk.

Serve the matzo balls in bowls, pouring the lemongrass consomme over them.

Garnish with fresh herbs if desired.
