  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a pie dish.
  3. In a large bowl, combine the blueberries, sugar, cornstarch, lemon juice, vanilla extract, and salt. Mix well.
  4. Pour the blueberry mixture into the pie crust.
  5. Dot the top of the filling with small pieces of butter.
  6. Cover the pie with the remaining pie crust, sealing the edges. Cut slits in the top crust to allow steam to escape.
  7. Brush the top crust with beaten egg.
  8. Bake the pie for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
