Layered Pumpkin-Chocolate Cheesecake

Preheat the oven to 325°F (163°C).

In a medium bowl, mix the graham cracker crumbs and melted butter until well combined. Press the mixture into the bottom of a 9-inch (23cm) springform pan to form the crust.

In a large mixing bowl, beat the cream cheese and sugar until smooth. Add the pumpkin puree, pumpkin pie spice, and vanilla extract, and mix until well combined.

Add the eggs, one at a time, beating well after each addition. Pour half of the cream cheese mixture over the crust.

Stir the melted chocolate chips into the remaining cream cheese mixture until well combined. Pour the chocolate mixture over the pumpkin layer in the pan.

Bake for 55-60 minutes, or until the center is set. Remove from the oven and let cool in the pan for 10 minutes.

Run a knife around the edges of the pan to loosen the cheesecake, then remove the sides of the pan. Let the cheesecake cool completely on a wire rack.

Refrigerate for at least 4 hours, or overnight, before serving.

Serve chilled, topped with whipped cream and chocolate shavings as desired.
