Lavender and Fig Tart with Goat Cheese Cream

Preheat the oven to 180°C (350°F).

In a food processor, combine the flour, sugar, salt, and chilled butter. Pulse until the mixture resembles coarse crumbs.

Add the egg yolk and vanilla extract. Pulse again until the dough comes together.

Transfer the dough to a tart pan and press it evenly into the bottom and sides.

Bake the crust for 15 minutes, or until golden brown. Let it cool.

In a saucepan, heat the milk and dried lavender over medium heat until simmering. Remove from heat and let it steep for 10 minutes.

In a bowl, whisk together the egg yolks, sugar, and cornstarch until well combined.

Slowly pour the lavender-infused milk into the egg mixture, whisking constantly.

Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened.

Remove from heat and strain the custard through a fine-mesh sieve.

In a separate bowl, beat the softened goat cheese and heavy cream until smooth.

Fold the goat cheese mixture into the custard until well combined.

Pour the filling into the cooled tart crust and smooth the top.
