  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually mix in the dry ingredients, alternating with the milk. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  6. In a microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring until smooth.
  7. Dip each cooled muffin into the melted chocolate, then roll in the shredded coconut to coat. Place on a baking sheet lined with parchment paper.
