In a saucepan, heat the heavy cream and whole milk over medium heat until it begins to steam.

In a separate bowl, whisk together the granulated sugar and egg yolks until well combined.

Slowly pour the hot cream mixture into the egg mixture, whisking constantly.

Pour the mixture back into the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.

Remove from heat and stir in the vanilla extract.

Allow the mixture to cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

Once chilled, pour the mixture into an ice cream maker and churn according to manufacturer's instructions.

During the last few minutes of churning, drizzle in the caramel sauce and sprinkle in the sea salt.

Transfer the churned ice cream to a lidded container and freeze for an additional 2-3 hours to firm up.
