Kumquat Cookies
Kumquats are the only citrus fruit that can be eaten whole, including the peel.

Preheat the oven to 180°C (350°F).

In a large bowl, cream together the butter and granulated sugar until light and fluffy.

Beat in the egg and vanilla extract.

In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and kumquat zest.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Stir in the kumquat juice.

Roll the dough into small balls and place them on a baking sheet lined with parchment paper.

Bake for 10-12 minutes, or until the edges are golden brown.

Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
