  5. Divide the dough into small portions and roll each portion into a thin circle.
  6. Place a spoonful of the potato filling in the center of each circle.
  7. Fold the dough over the filling to form a pocket and seal the edges.
  8. Preheat the oven to 375°F (190°C).
  9. Place the knishes on a baking sheet and brush them with beaten egg.
  10. Bake for 25-30 minutes or until golden brown.
  11. Let the knishes rest for 10 minutes before serving.
