Ken’s Corn Chowder

Add flour to the pot and stir well to combine with the butter and onion mixture. Cook for 1-2 minutes, stirring constantly.

Slowly pour in vegetable broth while stirring continuously to prevent lumps. Bring the mixture to a boil.

Add diced potatoes and corn to the pot. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the potatoes are tender.

Stir in milk and season with salt and black pepper. Cook for an additional 5 minutes.

While the chowder is simmering, cook the bacon in a separate pan until crispy. Once cooked, crumble the bacon into small pieces.

Serve the corn chowder hot, garnished with crumbled bacon and chopped chives.
