Preheat the oven to 350°F (175°C).

Cut the kabocha squash in half, remove the seeds, and roast in the oven for 30 minutes or until tender.

In a food processor, combine the all-purpose flour, unsalted butter, granulated sugar, egg yolks, vanilla extract, and salt. Pulse until the mixture resembles coarse crumbs.

Press the mixture into a tart pan to form the crust.

In a separate bowl, mash the roasted kabocha squash until smooth.

Add the heavy cream, ground cinnamon, ground nutmeg, and powdered sugar to the mashed squash. Mix well.

Pour the squash mixture into the tart crust.

Bake in the preheated oven for 45 minutes or until the filling is set.
