  1. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  2. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture and mix until well combined.
  5. Divide the dough into two equal parts.
  6. Add red food coloring to one part of the dough and mix until the color is evenly distributed.
  7. Wrap both dough portions in plastic wrap and chill in the refrigerator for 30 minutes.
  8. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  9. Take a small piece of each dough and roll them together between your palms to create marbled cookies.
  10. Place the shaped cookies on the prepared baking sheet and press down slightly to flatten.
  11. Bake for 10-12 minutes or until the edges are lightly golden.
  12. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
  13. Transfer the cookies to a wire rack to cool completely.
  14. In a microwave-safe bowl, melt the white chocolate chips in 30-second intervals, stirring between each interval, until smooth.
  15. Dip half of each cooled cookie into the melted white chocolate and let it set.
