Stuffed mushrooms have been a popular appetizer since the early 20th century and are often served at parties and gatherings.

  1. Preheat the oven to 375°F (190°C).
  2. Remove the stems from the mushrooms and chop them finely.
  3. Heat olive oil in a pan over medium heat. Add the chopped mushroom stems, onion, and garlic. Sauté until the onion is translucent.
  4. Add the spinach and cook until wilted. Remove from heat.
  5. In a bowl, combine the cooked mushroom stems and spinach mixture with Parmesan cheese, breadcrumbs, salt, black pepper, and parsley.
  6. Stuff each mushroom cap with the mixture and place on a baking sheet.
  7. Bake for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown.
  8. Let the stuffed mushrooms rest for 5 minutes before serving.
