Jam-Dandy Muffins
Muffins were originally called ‘muffin cakes’ and were more like bread rolls. The term ‘muffin’ later evolved to refer to the sweet, individual-sized cakes we know today.
This is vegetarian recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 9.

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, baking powder, and salt.

In a separate bowl, mix together the melted butter and sugar until well combined. Add the egg, milk, and vanilla extract, and mix until smooth.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Spoon the batter into the prepared muffin tin, filling each cup about halfway. Make a small well in the center of each muffin and fill with a teaspoon of jam.

Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
