In a saucepan, melt the Irish cheddar cheese over medium heat.

In a separate saucepan, heat the stout beer until warm.

In a small bowl, whisk together the cornstarch and a little bit of the warm beer to create a slurry.

Slowly pour the slurry into the melted cheese, stirring constantly.

Add the remaining beer, garlic, Dijon mustard, Worcestershire sauce, salt, and black pepper to the cheese mixture.

Continue stirring until the fondue is smooth and creamy.
