Preheat the oven to 350°F (175°C).

In a medium bowl, whisk together the flour, baking soda, and salt.

In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until smooth.

Beat in the egg and vanilla extract.

Gradually add the dry ingredients to the wet ingredients and mix until well combined.

Roll the dough into 1-inch balls and place them on a baking sheet.

Flatten each ball with a fork, creating a crisscross pattern.

In a small bowl, whisk together powdered sugar and milk to make the filling.

Spread the filling on the flat side of one cookie and sandwich it with another cookie.
