Indonesian Mooncakes are traditionally eaten during the Mid-Autumn Festival, which is celebrated by the Chinese community in Indonesia.

  1. In a mixing bowl, combine all-purpose flour, butter, granulated sugar, egg yolks, and pandan juice. Mix until a dough is formed.
  2. Divide the dough into small portions and flatten each portion.
  3. Spoon a tablespoon of red bean paste onto each flattened dough and place a salted egg yolk on top.
  4. Fold the dough over the filling, sealing the edges.
  5. Brush the mooncakes with sweetened condensed milk and sprinkle melon seeds on top.
  6. Preheat the oven to 180°C (350°F) and bake the mooncakes for 30-40 minutes, or until golden brown.
  7. Allow the mooncakes to cool for 1 hour before serving.
