Preheat the oven to 325°F (163°C).

In a small bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of individual cheesecake pans or a regular muffin tin.

In a large mixing bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition.

Stir in the sour cream and flour until well combined.

Pour the cream cheese mixture over the crust in the pans or muffin tin.

Bake for 20-25 minutes, or until the cheesecakes are set but still slightly jiggly in the center.

Remove from the oven and let cool in the pans or muffin tin for 10 minutes.

Transfer to a wire rack and let cool completely.

Refrigerate for at least 2 hours before serving.
