Dissolve instant coffee in hot water. Add the coffee mixture to the mascarpone mixture and mix well.

In a separate bowl, dissolve gelatin powder in cold water. Let it sit for 5 minutes until it becomes soft.

In a small saucepan, heat the gelatin mixture over low heat until it dissolves completely. Remove from heat and let it cool slightly.

In a clean mixing bowl, beat egg whites with salt until stiff peaks form.

Gently fold the whipped egg whites into the mascarpone mixture.

In a separate mixing bowl, whip the whipping cream until soft peaks form. Fold the whipped cream into the mascarpone mixture.
