Hummingbird cake, which inspired this recipe, is a popular Southern dessert that originated in Jamaica.

Preheat the oven to 350°F (175°C). Grease and flour mini loaf pans.

In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.

In a separate bowl, mix mashed bananas, crushed pineapple, sugar, oil, egg, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in chopped walnuts.

Divide the batter evenly among the prepared mini loaf pans.

Bake for 25 minutes or until a toothpick inserted into the center comes out clean.

Allow the mini loaves to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
