Honey has been used in baking for centuries and adds natural sweetness and moisture to muffins.

Preheat the oven to 375°F (190°C) and grease a muffin tin.

In a large bowl, whisk together the flour, baking powder, salt, and cinnamon.

In a separate bowl, beat the eggs, honey, oil, milk, and vanilla extract until well combined.

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

If desired, fold in the chopped nuts.

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
