Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1 hour.

In a large pot, bring 10 cups of water to a boil. Add baking soda and stir until dissolved.

Divide the dough into 8 equal pieces. Roll each piece into a long rope and cut it into smaller sticks.

Carefully drop the pretzel sticks into the boiling water, a few at a time, and cook for 30 seconds.
