  1. In a bowl, cream together the butter and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract, and mix until well combined.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. Roll out the dough to a 1/8-inch (3 mm) thickness on a lightly floured surface.
  8. Use a round cookie cutter to cut out circles from the dough and place them on the prepared baking sheet.
  9. Bake for 8-10 minutes, or until the cookies are set.
  10. Remove from the oven and let cool completely on a wire rack.
  11. In a heatproof bowl, melt the unsweetened chocolate in the microwave or over a double boiler.
  12. In a separate bowl, whip the heavy cream until stiff peaks form.
  13. Fold the melted chocolate into the whipped cream until well combined.
  14. Spread a spoonful of the chocolate filling onto the bottom of one cookie and top with another cookie.
  15. Repeat with the remaining cookies and filling.
  16. Dust with powdered sugar before serving.
