  1. In a mixing bowl, combine all-purpose flour, whole wheat flour, graham flour, brown sugar, baking powder, and salt.
  2. Cut the unsalted butter into small pieces and add it to the dry ingredients. Mix until the mixture resembles coarse crumbs.
  3. In a separate small bowl, combine honey, milk, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until the dough comes together.
  4. Divide the dough into two equal portions and shape each portion into a rectangle. Wrap in plastic wrap and refrigerate for 30 minutes.
  5. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Remove the dough from the refrigerator and roll it out on a lightly floured surface to a thickness of about 1/8 inch.
  7. Use a cookie cutter or a sharp knife to cut the dough into desired shapes.
  8. Place the crackers on the prepared baking sheet and prick each one with a fork.
