  1. Preheat the oven to 325°F (165°C).
  2. In a saucepan, heat milk until hot but not boiling.
  3. In a separate bowl, whisk together granulated sugar, eggs, and vanilla extract.
  4. Slowly pour the hot milk into the egg mixture, whisking constantly.
  5. In a small saucepan, heat water and brown sugar over medium heat until the mixture turns into a caramel sauce.
  6. Pour the caramel sauce into the bottom of individual ramekins.
  7. Pour the custard mixture over the caramel in the ramekins.
  8. Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
  9. Bake for 30 minutes or until the custard is set.
  10. Remove the ramekins from the baking dish and let them cool to room temperature.
  11. Refrigerate for at least 2 hours or until chilled.
  12. To serve, run a knife around the edge of each ramekin and invert onto a plate.
