Rinse the red beans and soak them overnight.

In a large pot, heat some oil and sauté the onion, bell pepper, celery, and garlic until softened.

Add the soaked red beans, vegetable broth, Cajun seasoning, thyme, bay leaves, salt, and black pepper to the pot.

Bring the mixture to a boil, then reduce the heat and let it simmer for about 1 hour, or until the beans are tender.

While the beans are cooking, cook the brown rice according to the package instructions.

Once the beans are cooked, remove the bay leaves and mash some of the beans to thicken the sauce.

Serve the red beans over the cooked brown rice and garnish with chopped green onions.
