Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.

Grate the carrots and zucchini. Set aside.

In a large bowl, combine the whole wheat flour, oats, baking powder, cinnamon, nutmeg, and salt.

In a separate bowl, whisk together the eggs, honey, coconut oil, and vanilla extract.

Add the grated carrots, zucchini, raisins, and walnuts to the wet ingredients and stir well.

Gradually add the wet ingredients to the dry ingredients and mix until just combined.

Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
