  1. In a mixing bowl, combine the all-purpose flour, ground hazelnuts, icing sugar, and a pinch of salt. Cut the unsalted butter into small cubes and add it to the bowl.
  2. Use your fingertips to rub the butter into the dry ingredients until the mixture resembles breadcrumbs.
  3. Add the egg yolk, vanilla extract, and milk to the bowl. Mix until the dough comes together.
  4. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 30 minutes.
  5. Preheat the oven to 180°C (350°F). Roll out the dough on a lightly floured surface and cut out circles to fit your tartlet molds.
  6. Press the dough into the molds and prick the bottoms with a fork. Bake for 15-20 minutes until golden brown.
  7. Remove the tartlet shells from the oven and let them cool completely.
  8. In a small saucepan, heat the apricot jam until melted. Brush the inside of each tartlet shell with the melted jam.
  9. Fill each tartlet shell with chopped hazelnuts.
  10. Serve the hazelnut tartelettes and enjoy!
