Linzer cookies originated in Austria and are named after the city of Linz. They are traditionally made with ground almonds and filled with raspberry jam, but this recipe adds a delicious twist with hazelnuts and blackberry jam.

  1. In a bowl, whisk together the flour and ground hazelnuts.
  2. In a separate large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Add the egg yolks and vanilla extract to the butter mixture, and mix until well combined.
  4. Gradually add the flour mixture to the butter mixture, and mix until the dough comes together.
  5. Divide the dough in half, shape each half into a disk, and wrap in plastic wrap. Refrigerate for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  7. On a lightly floured surface, roll out one disk of dough to about 1/8 inch (3 mm) thickness.
  8. Using a round cookie cutter, cut out cookies and place them on the prepared baking sheet.
  9. Repeat with the remaining dough.
  10. Using a smaller cookie cutter, cut out the centers of half of the cookies.
  11. Bake the cookies for 10-12 minutes, or until the edges are lightly golden.
  12. Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  13. Once the cookies are cool, spread a teaspoon of blackberry jam on the solid cookies.
  14. Dust the cookies with the cut-out centers with powdered sugar.
  15. Place a cut-out cookie on top of each jam-covered cookie to create a sandwich.
