Preheat the oven to 325°F (160°C).

In a medium bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch (23 cm) springform pan to form the crust.

In a large mixing bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Add flour and mix until well combined.

Add eggs and egg yolks one at a time, beating well after each addition. Stir in heavy cream.

Pour the cream cheese mixture over the crust in the springform pan.

Place the springform pan in a larger baking pan and pour boiling water into the larger pan to create a water bath.

Bake for 60 minutes or until the center is set.

Remove the cheesecake from the oven and let it cool in the water bath for 30 minutes. Then, remove it from the water bath and let it cool completely on a wire rack.

Once cooled, refrigerate the cheesecake for at least 3 hours or overnight.

Just before serving, sprinkle turbinado sugar evenly over the top of the cheesecake. Use a kitchen torch to caramelize the sugar until it forms a crisp layer.
