Hazelnut Ganache Mini Cakes

Preheat the oven to 350°F (175°C) and grease a mini cake pan.

In a bowl, whisk together hazelnut flour, all-purpose flour, cocoa powder, baking powder, and salt.

In a separate bowl, cream together butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with milk. Mix until just combined.

Spoon the batter into the prepared pan, filling each cavity about 2/3 full. Smooth the tops with a spatula.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool in the pan for 10 minutes. Transfer to a wire rack to cool completely.

In a saucepan, heat heavy cream until just simmering. Remove from heat and add dark chocolate. Let it sit for 2 minutes, then stir until smooth and creamy. Let the ganache cool slightly.

Once the cakes have cooled, use a small spoon to create a well in the center of each cake. Fill the wells with hazelnut spread.

Pour the ganache over the cakes, allowing it to drip down the sides. Let the ganache set for about 30 minutes.

Dust the cakes with powdered sugar and garnish with chopped hazelnuts.
