Grilled Loaded Potato Skins
Potato skins were first popularized in the 1970s by a restaurant chain called T.G.I. Friday’s.
This is vegetarian and gluten free recipe. Dish can be prepared in 85 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 8.

Preheat the grill to medium heat.

Wash and dry the potatoes. Prick each potato several times with a fork.

Rub the potatoes with olive oil and sprinkle with salt and black pepper.

Place the potatoes on the grill and cook for about 45-60 minutes, or until tender.

Remove the potatoes from the grill and let them cool for a few minutes.

Cut the potatoes in half lengthwise and scoop out the flesh, leaving a thin layer of potato on the skins.

Brush the potato skins with olive oil and sprinkle with salt and black pepper.

Place the potato skins back on the grill, skin side down, and cook for about 5 minutes, or until crispy.

Remove the potato skins from the grill and fill each skin with shredded cheddar cheese and crumbled bacon.

Place the potato skins back on the grill and cook for another 5 minutes, or until the cheese is melted.

Remove the potato skins from the grill and top with sour cream and chopped green onions.
