  2. In a large saucepan, combine the rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  3. In a separate pan, sauté the chopped onion and minced garlic until the onion is translucent.
  4. In a large mixing bowl, combine the cooked rice, sautéed onion and garlic, chopped green chiles, frozen corn kernels, sour cream, shredded Monterey Jack cheese, salt, and black pepper. Mix well.
  5. Transfer the mixture to a greased casserole dish.
  6. Bake in the preheated oven for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  7. Remove from the oven and let rest for 10 minutes.
