  1. In a large bowl, combine the flour, yeast, and salt.
  2. Add the olive oil, water, and Greek yogurt to the bowl. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes, or until smooth and elastic.
  4. Place the dough in a greased bowl and cover with a clean kitchen towel. Let it rest for 10 minutes.
  5. Preheat the oven to 450°F (230°C).
  6. Divide the dough into 4 equal portions and roll each portion into a thin circle.
  7. Transfer the dough circles onto a baking sheet lined with parchment paper.
  8. In a small bowl, combine the feta cheese, cherry tomatoes, Kalamata olives, red onion, oregano, mint, lemon juice, salt, and black pepper. Mix well.
  9. Spread the feta cheese mixture evenly over the dough circles.
  10. Bake in the preheated oven for 12-15 minutes, or until the flatbread is golden brown and crispy.
