Granny’s Sponge Cake with Peanut Butter Icing

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a medium bowl, sift together the cake flour, baking powder, and salt.

In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the vanilla extract.

Add the eggs one at a time, beating well after each addition.

Gradually add the flour mixture to the butter mixture, alternating with the milk. Begin and end with the flour mixture.

In a separate bowl, beat the egg whites and cream of tartar until stiff peaks form. Gently fold the egg whites into the cake batter.

Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.

In a small bowl, mix together the peanut butter, powdered sugar, and heavy cream until smooth and creamy.

Once the cake has cooled, spread the peanut butter icing over the top. Serve and enjoy!
