  1. Boil the potatoes until tender. Drain and mash.
  2. In a large bowl, combine the mashed potatoes, flour, salt, and pepper. Mix until a dough forms.
  3. On a floured surface, roll out the dough to a 1/8-inch thickness. Cut out circles using a round cookie cutter.
  4. Place a spoonful of the potato filling in the center of each circle. Fold the dough over the filling and press the edges to seal.
  5. In a large pot of boiling water, cook the perogies for 3-4 minutes or until they float to the top. Remove with a slotted spoon and set aside.
  6. Heat butter in a skillet over medium heat. Add the onion and cook until softened and lightly browned.
  7. Add the cooked perogies to the skillet and fry until golden brown on both sides.
  8. Serve hot with sour cream.
