  2. Roll out the puff pastry and cut into 4 equal squares.
  3. Place a slice of goats cheese on each square.
  4. Drizzle honey over the cheese and sprinkle with thyme leaves.
  5. Fold the corners of the pastry over the cheese, creating a parcel.
  6. Brush the pastry with beaten egg.
  7. Place the parcels on a baking sheet and bake for 20 minutes, or until golden brown.
  8. Allow to rest for 5 minutes before serving.
