Goats cheese has been enjoyed for thousands of years and is believed to have been discovered by accident when nomadic tribes stored milk in bags made from animal stomachs, which caused the milk to curdle and form cheese.

Preheat the oven to 200°C (400°F).

Roll out the puff pastry and cut into 4 equal squares.

Place a slice of goats cheese on each square.

Drizzle honey over the cheese and sprinkle with thyme leaves.

Fold the corners of the pastry over the cheese, creating a parcel.

Brush the pastry with beaten egg.

Place the parcels on a baking sheet and bake for 20 minutes, or until golden brown.

Allow to rest for 5 minutes before serving.
