Preheat the oven to 375°F (190°C).

Slice the zucchini into thin rounds.

Chop the onion and mince the garlic.

Heat olive oil in a skillet over medium heat. Add the onion and garlic, and sauté until softened.

Add the zucchini slices to the skillet and cook until tender.

In a separate bowl, whisk together the eggs, milk, Italian seasoning, salt, and black pepper.

Grease a casserole dish and layer half of the zucchini mixture on the bottom.

Pour half of the egg mixture over the zucchini.

Sprinkle half of the breadcrumbs, Parmesan cheese, and mozzarella cheese on top.

Repeat the layers with the remaining zucchini, egg mixture, breadcrumbs, Parmesan cheese, and mozzarella cheese.

Bake in the preheated oven for 30-35 minutes, or until the top is golden and the casserole is set.
