In a medium bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt. Set aside.

In a large bowl, cream together butter and sugar until light and fluffy. Beat in molasses, egg, and vanilla extract.

Gradually add the dry ingredients to the wet ingredients, mixing until well combined.

Divide the dough in half and wrap each half in plastic wrap. Chill in the refrigerator for at least 1 hour.

Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.

Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Use gingerbread man cookie cutters to cut out shapes.

Place the cut-out cookies on the prepared baking sheets, leaving space between each cookie.

Bake for 10-12 minutes, or until the edges are lightly browned.

Allow the cookies to cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely.
