Gingerbread Men
Gingerbread men are often associated with the holiday season, especially during Christmas. They have a long history and are believed to have originated in Europe in the 16th century.

In a bowl, whisk together flour, ginger, cinnamon, baking soda, and salt.

In a separate bowl, beat butter and brown sugar until creamy.

Add molasses, egg, and vanilla extract to the butter mixture. Mix well.

Gradually add the dry ingredients to the wet ingredients, mixing until well combined.

Divide the dough in half and wrap each portion in plastic wrap. Chill in the refrigerator for at least 1 hour.

Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.

Roll out the dough on a lightly floured surface to about 1/4 inch thickness.

Use gingerbread man-shaped cookie cutters to cut out shapes from the dough.

Place the cut-out dough on the prepared baking sheets.

Bake for 8-10 minutes or until the edges are lightly golden.

Allow the gingerbread men to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.
