  1. Preheat the oven to 425°F (220°C). In a large bowl, whisk together flour, sugar, baking powder, ground ginger, and salt.
  2. Cut the cold butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  3. In a separate bowl, whisk together milk, egg, and vanilla extract. Add the wet ingredients to the dry ingredients and stir until just combined.
  4. Turn the dough out onto a lightly floured surface and knead gently for about 1 minute. Pat the dough into a circle about 1 inch thick.
