Peel the pears and remove the core from the bottom, keeping the stem intact.

In a saucepan, bring water, sugar, and ginger to a boil.

Add the pears to the saucepan and reduce the heat to low. Simmer for about 20 minutes or until the pears are tender.

Remove the pears from the poaching liquid and let them cool.

In a separate bowl, crumble the gorgonzola cheese and roughly chop the walnuts.

Once the pears have cooled, slice them in half lengthwise and remove any remaining seeds.

Fill the center of each pear half with crumbled gorgonzola cheese and sprinkle with chopped walnuts.
