Genoise is a classic French sponge cake named after the city of Genoa in Italy.

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a heatproof bowl, whisk together the eggs and sugar. Place the bowl over a pan of simmering water and continue whisking until the mixture is warm to the touch and the sugar has dissolved.
  3. Remove the bowl from the heat and continue whisking until the mixture is thick and pale yellow.
  4. Sift the flour over the egg mixture and gently fold it in using a rubber spatula.
  5. In a small saucepan, melt the butter over low heat. Remove from heat and stir in the vanilla extract.
  6. Gradually add the melted butter to the batter, folding gently until fully incorporated.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
  10. Once cooled, the genoise is ready to be served or used in other dessert recipes.
