Heat vegetable oil in a large pan or wok over medium-high heat.

Add minced garlic and sauté until fragrant.

Crack the eggs into the pan and scramble them.

Add cooked rice, frozen peas and carrots, soy sauce, salt, and pepper. Stir-fry everything together until well combined.

Cook for an additional 3-4 minutes, stirring constantly.
